Well at first or in few episodes I disliked or find her annoying too.
But if think real then Vivi tried her best to things getting right. It's just Crocodile is very smart and luck wasn't at Vivi's side. But she really tried her best. As she's a princess, good princess had their own morality to protect their kingdom and people no matter what.
Yet, it's true that I somewhat in some situation find her annoying.

She's been doing this crap for a long time, other characters were so far really rational and not whinny like her.

She has a far more realistic reaction to what has happened on this episode.

Probably because unlike other characters, she was definitely stressed about the fact that if she failed, her home and her loved ones are gone. She was the most involved with the situation, from when she started spying on Baroque Works at the age of 14 till now. Probably the fact that she is a 16 year old teenager makes her reactions understandable.
